Prep Time 15 minutes
Total Time 4 hours
Servings: 8 servings
Course: Salad
Cuisine: American

Ingredients

  • 1 16-ounce container cottage cheese
  • 1 can crushed pineapple (15 ounces), drained
  • 1 3-ounce box powdered gelatin (any flavor)
  • 1 8-ounce container whipped topping (thawed)
  • to taste fresh fruit (such as chopped strawberries, cherries, or raspberries)

Equipment

  • Large mixing bowl
  • Whisk or spatula
  • Measuring cups and spoons
  • Serving Dish
  • Refrigerator

Method

  1. In a medium bowl, dissolve the powdered gelatin in 1 cup of boiling water. Stir until completely dissolved, then let it cool slightly.
  2. In a large mixing bowl, add the cottage cheese, drained crushed pineapple, and the prepared Jell-O mixture. Stir well to combine all the ingredients evenly.
  3. Gently fold the thawed whipped topping into the mixture. Be careful not to deflate the whipped topping; you want to maintain that light and fluffy texture.
  4. Transfer the mixture to a serving dish and cover it with plastic wrap. Refrigerate for at least 4 hours, or until the salad is set and chilled.
  5. Before serving, garnish the top of your Cottage Cheese Jell-O Salad with fresh fruit like strawberries, cherries, or raspberries for an extra touch of color and flavor. Serve chilled and enjoy the smiles!

Notes

  • Ensure the crushed pineapple is well-drained to avoid a watery salad.
  • Don’t rush the chilling process; allow the salad to set properly for the best texture.
  • Experiment with different gelatin flavors to match your fruit choice.
