Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 large egg, lightly beaten
  • 1/3 cup granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons vegetable shortening, softened
  • 3/4 teaspoon vanilla extract
  • 3/4 cup low-fat milk
  • 1/2 cup half-and-half
  • 1/2 cup low-fat buttermilk
  • Nonstick cooking spray

Equipment

  • Waffle maker
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Spatula

Method

  1. Gather your ingredients listed above. Having everything ready will make the process smoother.
  2. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, kosher salt, baking soda, and baking powder.
  3. In a separate bowl, combine the beaten egg, granulated sugar, softened butter, vegetable shortening, vanilla extract, low-fat milk, half-and-half, and buttermilk. Whisk until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients. Gently fold together until just combined.
  5. Preheat your waffle maker according to the manufacturer’s instructions, spraying it with nonstick cooking spray.
  6. Pour the appropriate amount of batter onto the center of the waffle grid and cook until golden brown and crispy, about 4-5 minutes.
  7. Carefully remove the waffles and serve immediately with your favorite toppings.

Notes

  • For extra crispy waffles, let the batter sit for 5-10 minutes before cooking.
  • Reduce the milk for thicker waffles.
  • Ensure your waffle maker is hot enough before adding batter for the best texture.
  • Serve with various toppings to suit everyone’s taste.
