Method
 

  1. In a medium-sized mixing bowl, whisk together the 2 cups of canned coconut milk and 1 1/2 tablespoons of maple syrup until well combined.
  2. Slowly stir in the 1/2 cup chia seeds, making sure they are evenly distributed throughout the mixture.
  3. Allow the mixture to sit at room temperature for about 10 minutes. This will give the chia seeds time to absorb the liquid and begin to swell.
  4. After 10 minutes, give the mixture another good stir to break up any clumps of chia seeds. This step is essential for a smooth pudding.
  5. Transfer the mixture into refrigerator-safe containers and cover. Place them in the refrigerator for at least 4 hours, or preferably overnight, to allow the pudding to fully set.
  6. Once set, give the pudding a good stir before serving. Top with your favorite fruits, nuts, or granola, and enjoy!
