Ingredients

  • 3.5 cups sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 2.5 tablespoons cornstarch
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 0.5 cup confectioners sugar

Equipment

  • Mixing bowl
  • Baking sheet
  • Parchment paper
  • Cookie scoop or spoon
  • Oven

Method

  1. Step 1: Preheat the Oven. Begin by preheating your oven to 325°F (160°C).
  2. Step 2: Prepare the Baking Sheet. Line a baking sheet with parchment paper.
  3. Step 3: Mix the Dry Ingredients. In a large mixing bowl, combine the sweetened shredded coconut, cornstarch, and confectioners sugar. Stir until well mixed.
  4. Step 4: Add the Wet Ingredients. Pour in the sweetened condensed milk, almond extract, and vanilla extract. Mix until fully combined.
  5. Step 5: Shape the Macaroons. Using a cookie scoop or spoon, portion out the coconut mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Step 6: Bake. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown.
  7. Step 7: Cool. Remove the macaroons from the oven and allow them to cool on the baking sheet for about 10 minutes. Transfer to a wire rack to cool completely.
  8. Step 8: Serve and Enjoy! These Cocadas are perfect served at room temperature or dipped in chocolate.

Notes

  • Drizzle melted chocolate over the cooled macaroons for an extra touch.
  • Lightly toast the shredded coconut for added flavor.
  • Adjust the size of the macaroons and baking time as desired.
  • Store leftovers in an airtight container for up to a week.
