Cilantro Lime Sauce

Ingredients
  

  • 1 cup sour cream or Greek yogurt
  • 1 bunch cilantro leaves washed and roughly chopped
  • 1/3 cup salsa verde
  • 2 cloves garlic minced
  • 1 lime Juice of 1
  • 1/4 teaspoon Kosher salt or to taste
  • Pepper to taste

Method
 

  1. Start by washing the cilantro leaves thoroughly to remove any dirt or grit. Roughly chop the leaves and set them aside. Mince the garlic cloves finely to release their flavor.
  2. In a medium mixing bowl, add 1 cup of sour cream or Greek yogurt. Use Greek yogurt for a thicker consistency and a tangy flavor, or sour cream for a creamier texture.
  3. To the bowl, add the chopped cilantro, salsa verde, minced garlic, and the juice of 1 lime. The salsa verde adds a wonderful depth of flavor, so don't skip this ingredient!
  4. Sprinkle in the Kosher salt and add pepper to taste. Start with a little and adjust based on your preference.
  5. Using a whisk or fork, mix all the ingredients together until you achieve a creamy, smooth consistency. Taste and adjust the seasoning if needed; sometimes a little extra lime juice or salt can make a big difference.
  6. Once combined, cover the bowl with plastic wrap or transfer the sauce to an airtight container. Refrigerate for at least 30 minutes to let the flavors meld together. The waiting is the hardest part, but it’s worth it!

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • Use a clean utensil when scooping out the sauce to avoid contamination.
  • If the sauce thickens, stir in a little water or additional lime juice to restore its creamy consistency.
