  • 1/2 cup pure maple syrup, honey, or agave your preferred sweetener
  • 1/2 tsp pure vanilla extract enhances the flavor
  • 1/2 cup flour spelt, white, oat, sorghum, or almond flour
  • 1 1/2 tsp baking soda helps bars rise
  • 1/4 cup chocolate chips plus more for garnish

Method
 

Instructions:
  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the tahini, maple syrup (or honey/agave), and vanilla extract. Stir until well combined and creamy.
  3. In another bowl, whisk together the flour and baking soda.
  4. Gradually add the dry mixture to the wet mixture. Stir until just combined; the batter should be thick but pourable.
  5. Fold in the chocolate chips, reserving a few for garnish.
  6. Pour the batter into the prepared baking pan and spread it evenly. Sprinkle reserved chocolate chips on top.
  7. Bake for 20-25 minutes until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before slicing.

Notes

  • Ensure your tahini is well mixed before measuring; it can separate in the jar.
  • For a more intense chocolate flavor, use dark chocolate chips or chunks.
  • These bars taste even better the next day, as the flavors meld together.
