Ingredients
  

  • 1 can chickpeas or white beans rinsed and drained
  • 2 tbsp cocoa powder
  • 2 tbsp Dutch cocoa or additional regular cocoa powder
  • 1/3 cup flour (options: white, oat, spelt, almond, sorghum, etc.)
  • 3 tbsp milk of choice or applesauce
  • 3 tbsp oil or nut butter of choice
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup sugar (for refined-sugar-free, try Black Bean Brownies)
  • 1/2 cup chocolate chips (not optional; omit at your own risk)

Method
 

  1. Preheat your oven to 350°F (175°C). This step is crucial for achieving that perfect bake.
  2. Grease your 8x8 inch baking pan lightly or line it with parchment paper for easier removal later.
  3. In your food processor, combine the rinsed chickpeas (or white beans), cocoa powder, Dutch cocoa, flour, milk or applesauce, oil or nut butter, vanilla extract, baking powder, salt, and baking soda. Blend until the mixture is completely smooth.
  4. Add the sugar and blend again until fully incorporated. Scrape down the sides of the food processor as needed to ensure everything is mixed well.
  5. Transfer the brownie batter into a mixing bowl and fold in the chocolate chips using a spatula. This will give your brownies those delicious melty pockets of chocolate.
  6. Pour the batter into your prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean. Remember, a few crumbs sticking to the toothpick are a sign of fudginess!
  7. Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares, and indulge!
