Slice the baguette in half lengthwise. Spread a generous amount of the chipotle mayo on both halves. Layer the turkey or chicken deli meat evenly on one side, followed by the thinly sliced red onion, provolone cheese, and avocado. Top with the other half of the baguette.
Preheat your panini press or skillet over medium heat. If using a skillet, melt a little butter in it. Place the assembled sandwich in the press or skillet, and grill until the bread is golden brown and the cheese has melted, about 3-5 minutes per side. If using a skillet, you may want to press down with a spatula for even grilling.
