Ingredients
  

  • 1/4 cup mayonnaise
  • 1 clove garlic pressed
  • 2 teaspoons lemon juice
  • 1/8 teaspoon chipotle powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 ounces turkey or chicken deli meat
  • 4 slices provolone cheese

Method
 

  1. In a small bowl, combine the mayonnaise, pressed garlic, lemon juice, chipotle powder, salt, and pepper. Mix well until smooth and creamy. This zesty spread will enhance the flavors of the panini.
  2. Slice the baguette in half lengthwise. Spread a generous amount of the chipotle mayo on both halves. Layer the turkey or chicken deli meat evenly on one side, followed by the thinly sliced red onion, provolone cheese, and avocado. Top with the other half of the baguette.
  3. Preheat your panini press or skillet over medium heat. If using a skillet, melt a little butter in it. Place the assembled sandwich in the press or skillet, and grill until the bread is golden brown and the cheese has melted, about 3-5 minutes per side. If using a skillet, you may want to press down with a spatula for even grilling.
  4. Once grilled to perfection, remove the panini from the heat. Let it cool for a minute, then slice it in half. Serve with your favorite side, such as a salad or some crunchy chips.

Notes

  • Let the sandwich rest for a minute after grilling to make slicing easier.
  • Switch up the deli meat with smoked turkey or chicken breast for variety.
  • Consider marinating the onions in lemon juice for added flavor.
