  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • ¾ cup olive oil
  • 2 tablespoons minced garlic
  • ½ cup chopped parsley
  • ¼ cup butter
  • 1 pieces Lemon sliced or quartered, for garnish or a squeeze of juice before serving

Method
 

  1. Start by cutting your boneless, skinless chicken breasts into 1-inch cubes. This size ensures they cook evenly and quickly. Place the cubed chicken in a large bowl and season it with salt and freshly ground pepper.
  2. In a shallow dish, add the flour. Dredge each piece of chicken in the flour, coating it evenly. This step adds a delicious crunch and helps to create a lovely golden crust.
  3. In a large skillet, heat the olive oil over medium-high heat. You want the oil hot enough to sear the chicken, which will take about 2-3 minutes.
  4. Add the floured chicken pieces to the skillet in a single layer, being careful not to overcrowd the pan. Cook for about 5-6 minutes, turning occasionally until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
  5. In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant but be careful not to burn it. The garlic should turn golden and aromatic.
  6. Return the cooked chicken to the skillet and add the chopped parsley. Toss everything together, allowing the flavors to meld for another 2-3 minutes.
  7. Add the butter to the skillet, stirring until melted and combined with the chicken and garlic. This adds a rich flavor and makes the dish even more luxurious.
  8. Transfer the chicken to a serving platter and garnish with lemon slices or wedges. A squeeze of fresh lemon juice right before serving adds a delightful brightness to the dish.
