Ingredients
  

For the Noodles:
  • 10 oz Chinese egg noodles for soaking up the teriyaki sauce
  • 2 teaspoons olive oil for sautéing
  • 8 oz grilled chicken cut into strips
  • 1 large carrot thinly sliced diagonally
  • 1/4 cup bamboo shoots adds unique texture
  • 2 cups bean sprouts adds crunch and freshness
  • 3 green onions sliced diagonally, white parts separate
  • 1/2 cup Teriyaki Sauce for flavor
  • 1 teaspoon toasted sesame oil for nutty flavor

Method
 

Cooking Instructions:
  1. Start by bringing a large pot of lightly salted water to a boil. Add the Chinese egg noodles and cook according to package directions until they are al dente. Once cooked, drain and set aside, tossing them with a drizzle of olive oil to prevent sticking.
  2. In a large skillet or wok, heat 2 teaspoons of olive oil over medium-high heat. Add the grilled chicken strips and sauté for about 3-4 minutes until heated through and slightly golden.
  3. Add the sliced carrots, bamboo shoots, and the white parts of the green onions to the skillet. Stir-fry for another 2-3 minutes until the vegetables are tender yet still crisp.
  4. Add the cooked noodles to the skillet with the chicken and vegetables. Pour in the teriyaki sauce and toss everything together to ensure the noodles are well coated. Drizzle with toasted sesame oil and mix again.
  5. Finally, gently fold in the bean sprouts and the green onion greens. These should be added just before serving to maintain their crunch.
  6. Serve the Chicken Teriyaki Noodles hot, garnished with additional green onions if desired. Enjoy your homemade Asian-inspired dish that’s bursting with flavors!
