Ingredients
  

  • 4 cups cooked chicken breast chopped into small cubes
  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 cup celery chopped finely
  • 2 tablespoons green onion chopped
  • 3 tablespoons chopped almonds or slivered almonds optional
  • Salt and pepper to taste

Method
 

  1. Start with your cooked chicken breast. If you haven’t prepared it yet, you can boil, grill, or even roast it. Once cooked, chop the chicken into small cubes and set it aside.
  2. In a mixing bowl, combine the mayonnaise, plain Greek yogurt, lemon juice, and Dijon mustard. Stir until smooth and well combined. This creamy mixture will be the heart of your chicken salad!
  3. Add the chopped chicken to the bowl with the dressing. Then, toss in the finely chopped celery and green onions. If you're using almonds, now’s the time to add them in for a delightful crunch.
  4. Add salt and pepper to the mixture. Taste and adjust the seasoning as necessary, ensuring the flavors are well balanced.
  5. Cover the chicken salad and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully. Serve it on a bed of greens, in a sandwich, or with crackers for a delicious treat.

  • Store in an airtight container in the refrigerator for up to 3-4 days.
  • Consider storing the dressing separately if keeping for more than a day to prevent sogginess.
  • This salad can be frozen, but the texture may change upon thawing.
