Ingredients
  

For the Chicken:
  • 3 large boneless, skinless chicken breasts
  • 2 T capers fried for extra texture
  • 2 T olive oil
  • to taste salt and pepper
  • 1/2 tsp poultry seasoning
  • 2 tsp finely minced fresh garlic
  • 1/2 cup homemade chicken stock best for flavor
  • 2 T fresh lemon juice
  • 1/2 tsp sweetener of your choice optional
  • 2 T butter cut up into pieces
  • 1 T chopped fresh parsley for garnish

  • Meat mallet or rolling pin

Method
 

Cooking Instructions:
  1. Begin by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness, about 1 inch thick.
  2. Season both sides of the chicken breasts generously with salt, pepper, and poultry seasoning.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the pan and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the capers and fry for 1-2 minutes until crispy. Remove with a slotted spoon and drain on a paper towel.
  5. To the remaining oil in the skillet, add the minced garlic and sauté for about 30 seconds. Pour in the chicken stock and lemon juice, and add sweetener if desired. Bring to a simmer and reduce slightly.
  6. Remove the skillet from heat and whisk in the butter until melted. Stir in the fried capers and chopped parsley.
  7. Place the chicken breasts on a serving platter, spoon the sauce over, and garnish with additional parsley. Serve immediately.
