Ingredients
  

For the Patties:
  • 2 cups Shredded Chicken finely shredded
  • 2 large Eggs fresh
  • 1/2 cup Mayonnaise full-fat or light
  • 1/4 cup All-Purpose Flour or gluten-free blend
  • 2 tablespoons Fresh Dill chopped, or parsley as alternative
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 tablespoon Lemon Zest for brightness
  • 1 cup Shredded Mozzarella Cheese for creaminess
  • 2 tablespoons Olive Oil for sautéing
  • 1 cup Panko Bread Crumbs for coating

Method
 

Instructions:
  1. Step 1: Prepare the Chicken - Cook chicken breasts in water until fully cooked, about 15-20 minutes. Shred using forks or a stand mixer.
  2. Step 2: Mix the Ingredients - In a large bowl, combine shredded chicken, eggs, mayonnaise, flour, dill, salt, pepper, lemon zest, and mozzarella. Mix well.
  3. Step 3: Form the Patties - Shape the mixture into small patties, about 2-3 inches in diameter, and place on a plate.
  4. Step 4: Coat the Patties - Spread Panko breadcrumbs on a plate and coat each patty evenly.
  5. Step 5: Heat the Oil - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add patties without overcrowding.
  6. Step 6: Cook the Patties - Cook patties for 4-5 minutes on each side until golden brown. Add more oil as needed.
  7. Step 7: Serve and Enjoy - Transfer cooked patties to a paper towel-lined plate and serve warm with lemon wedges.
