Chicken Parmesan Gnocchi Bake

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts cubed
  • 16 ounces gnocchi 1 package
  • 2 cups marinara sauce divided
  • 8 ounces whole-milk mozzarella cheese sliced
  • ½ cup grated Parmesan cheese
  • 2 tablespoons torn fresh basil optional, for garnish

Method
 

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed chicken breasts and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and no longer pink in the center. Remove the skillet from heat and set aside.
  2. While the chicken is cooking, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually just a few minutes until they float to the surface. Drain the gnocchi and set aside.
  3. In the same skillet with the cooked chicken, add 1 cup of marinara sauce and the drained gnocchi. Stir until everything is well combined and coated in the sauce.
  4. Preheat your oven to 375°F (190°C). Transfer half of the gnocchi and chicken mixture to a baking dish. Layer half of the sliced mozzarella cheese on top. Add the remaining gnocchi mixture, followed by the rest of the marinara sauce. Finish with the remaining mozzarella and sprinkle the ½ cup of grated Parmesan cheese evenly over the top.
  5. Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  6. Once out of the oven, let the Chicken Parmesan Gnocchi Bake cool for a few minutes. Before serving, sprinkle with torn fresh basil for an added burst of flavor. Dish up and enjoy with a side salad or garlic bread!

Notes

  • Feel free to use store-bought marinara sauce to save time, or make your own for a fresh taste.
  • For a spicier kick, add red pepper flakes to the marinara sauce.
  • This dish can be made ahead of time and stored in the refrigerator before baking. Just cover tightly and bake when ready!
