Ingredients
  

For the Filling:
  • 1/2 cup salsa (medium or hot for more of a kick)
  • 1/2 cup sour cream
  • 4 oz. can mild chopped green chiles
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 3 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 cup freshly shredded Monterey Jack cheese
  • 1 cup freshly shredded sharp cheddar cheese
  • Cayenne pepper or hot sauce to taste
  • 12-14 medium (7-8 inch) flour tortillas
  • Vegetable oil (optional for frying)

Instructions
  1. In a large mixing bowl, combine the shredded chicken, salsa, sour cream, green chiles, chili powder, ground cumin, garlic powder, onion powder, smoked paprika, dried oregano, and salt. Stir until everything is well mixed. Add cayenne pepper or hot sauce to taste if you like an extra kick.
  2. To make rolling easier, warm the flour tortillas slightly. You can do this by placing them in a dry skillet over low heat for about 30 seconds on each side or wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  3. Take a tortilla and place a generous amount of the chicken mixture in the center. Sprinkle some of the Monterey Jack and cheddar cheeses on top. Roll the tortilla tightly around the filling and secure it with a toothpick if necessary. Repeat with the remaining tortillas and filling.
  4. If you prefer crispy flautas, heat vegetable oil in a skillet over medium heat. Once the oil is hot, carefully place the rolled flautas seam-side down in the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels to remove excess oil.
  5. For a healthier option, preheat your oven to 400°F (200°C). Arrange the rolled flautas on a baking sheet lined with parchment paper. Lightly spray or brush them with oil and bake for 15-20 minutes, turning halfway through, until they are golden and crispy.
  6. Once cooked, remove the flautas from the heat. Serve them immediately with your favorite toppings such as extra salsa, sour cream, or guacamole. Enjoy the crispy, cheesy goodness!

Notes

  • Don’t overfill the tortillas to prevent tearing.
  • Ensure the oil is hot enough before frying for crispy results.
  • If baking, space the flautas out on the baking sheet for even cooking.
