Ingredients
  

  • 16 oz cream cheese softened
  • 1.5 cups sour cream
  • 2 tbsp fajita seasoning
  • 1 cup bell pepper finely diced (any color)
  • 1/2 cup sweet onion finely diced
  • 2 cups shredded chicken
  • 1/2 cup Cheddar or Mexi-blend cheese shredded
  • 2 tbsp cilantro chopped

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese and sour cream until smooth.
  3. Stir in the fajita seasoning until evenly distributed.
  4. Add the finely diced bell pepper and sweet onion, mixing well.
  5. Gently fold in the shredded chicken.
  6. Sprinkle in the shredded cheese and chopped cilantro, mixing well.
  7. Transfer the mixture to a baking dish and spread evenly. Bake for 20-25 minutes until golden and bubbly.
  8. Let cool for a few minutes before serving warm with tortilla chips or veggies.

Notes

  • Use Greek yogurt instead of sour cream for a tangy twist.
  • Rotisserie chicken can save time.
  • For a dairy-free option, try vegan cream cheese.
