Ingredients

  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • Parsley for serving (optional)

Equipment

  • Cutting board
  • Sharp knife
  • Mixing bowl
  • Sauté pan
  • Spatula

Method

  1. Start by cutting the boneless skinless chicken breasts into bite-sized pieces. Aim for uniformity to ensure even cooking.
  2. In a mixing bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, kosher salt, and black pepper. Stir until well combined.
  3. Add the chicken pieces to the spice mixture, ensuring each piece is evenly coated. This step is crucial for maximum flavor.
  4. In a sauté pan, heat the extra virgin olive oil and unsalted butter over medium heat. Allow the butter to melt and foam up.
  5. Once the oil is hot, add the coated chicken pieces to the pan in a single layer. Avoid overcrowding to ensure they brown nicely. Cook for about 5-7 minutes, flipping halfway through until the chicken is golden brown and cooked through.
  6. Remove the Chicken Bites from the pan and place them on a plate. Garnish with freshly chopped parsley if desired. These bites are best served warm!
