  • 1 lb ground chicken
  • 2 tablespoons flat-leaf parsley roughly chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground sumac
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • ½ teaspoon dried oregano
  • 1 medium red bell pepper roughly chopped (for serving)

Build Chicken Adana Step by Step
  1. Step 1: Prepare the Spices - In a large mixing bowl, combine the ground chicken, paprika, salt, ground cumin, ground coriander, ground sumac, smoked paprika, red pepper flakes, and dried oregano.
  2. Step 2: Add Fresh Ingredients - Add the roughly chopped flat-leaf parsley and tomato paste to the chicken mixture. Drizzle in the olive oil to help bind the ingredients together.
  3. Step 3: Mix Thoroughly - Using your hands, mix the ingredients until they are well combined.
  4. Step 4: Form the Skewers - Mold the chicken mixture around the skewers, pressing firmly to ensure adherence.
  5. Step 5: Refrigerate - Place the skewers on a tray and cover them with plastic wrap. Refrigerate for at least 30 minutes.
  6. Step 6: Preheat the Grill - Preheat your grill or grill pan over medium-high heat.
