Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 stick unsalted butter melted and cooled
  • 1/2 cup unsalted butter melted and cooled
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg at room temperature
  • 1 large egg yolk at room temperature
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons freshly grated lemon zest/rind
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. In a separate large bowl, mix melted and cooled butter with granulated sugar and brown sugar until well combined. Add in the egg and egg yolk, mixing until smooth. Stir in lemon juice, lemon zest, vanilla extract, and lemon extract.
  5. Gradually add the dry ingredients to the wet mixture. Use a rubber spatula to fold them together until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet.
  7. Bake the cookies for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

  • For a lower-carb option, substitute almond flour for all-purpose flour.
  • Use granulated erythritol or stevia in place of sugars for a keto-friendly version.
  • Chill the dough for 30 minutes if cookies spread too much during baking.
