Ingredients

  • 1/4 cup pure maple syrup
  • 1/4 cup creamy peanut butter (just peanuts and salt)
  • 1 tablespoon coconut oil
  • 6 cups brown rice krispies

  • 2 teaspoons vanilla extract

Method
 

  1. Start by lining a 9x9 inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. In a large mixing bowl, combine 1/2 cup honey, 1/4 cup pure maple syrup, 1/4 cup creamy peanut butter, and 1 tablespoon coconut oil. Stir until smooth and well combined.
  3. Gently fold in the 6 cups of brown rice krispies until they're fully coated with the peanut butter mixture. This will form the chewy base of your bars.
  4. Transfer the mixture into the prepared baking pan. Use a spatula to press it down firmly and evenly. This ensures your bars hold together beautifully.
  5. In a double boiler or microwave, melt the 12 ounces of chopped dark chocolate along with 1/4 cup plus 1 tablespoon of coconut oil. Stir until the mixture is smooth and shiny.
  6. In another bowl, mix together 1 1/4 cups creamy peanut butter, 1/3 cup pure maple syrup, and 2 teaspoons vanilla extract. Stir until smooth.
  7. Pour the melted chocolate over the pressed rice krispie base, spreading it evenly. Next, dollop the peanut butter mixture over the chocolate layer, and use a spatula to spread it out gently.
  8. Drizzle any leftover melted chocolate over the peanut butter layer, and sprinkle a pinch of sea salt on top for that perfect sweet and salty balance.
  9. Place the baking pan in the refrigerator for at least 1-2 hours, or until the bars are set. Once firm, use the parchment paper to lift the bars out of the pan.
