  • 1 pound trimmed green beans
  • 2 cups sliced bell peppers (about 2 whole peppers)
  • 2 cups diced onion (1 medium onion)
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Ground black pepper to taste
  • 6 tablespoons cubed unsalted butter
  • 2 cups shredded sharp cheddar cheese

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C). If you're using a grill, preheat it to medium-high heat.
  2. Step 2: In a large mixing bowl, combine the sliced smoked sausage, halved baby red potatoes, trimmed green beans, sliced bell peppers, and diced onion.
  3. Step 3: Sprinkle the dried oregano, dried parsley flakes, garlic powder, paprika, salt, and ground black pepper over the mixture. Toss everything together until well-coated with the seasonings.
  4. Step 4: Cut large sheets of aluminum foil, about 12 inches long. Divide the sausage and vegetable mixture evenly among the sheets. Place 1 tablespoon of cubed butter on top of each packet.
  5. Step 5: Sprinkle the shredded sharp cheddar cheese generously over the top of each packet.
  6. Step 6: Fold the foil over the mixture, sealing it tightly to prevent any steam from escaping. Make sure there’s enough space inside the packet for the contents to cook and steam properly.
  7. Step 7: Place the foil packets on a baking sheet and transfer them to the preheated oven (or grill). Bake for 25-30 minutes, or until the potatoes are fork-tender and the sausage is heated through.
