  • 1 lb chicken thighs cut into bite-size pieces
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 1 cup white rice
  • 2 cups broccoli finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • pinch red pepper flakes
  • 2 cups chicken stock
  • 1/2 cup sour cream
  • 1 1/2 cups cheese shredded

Method
 

  1. Begin by heating the olive oil in a large skillet over medium heat. Once hot, add the bite-sized chicken thighs. Season with salt, pepper, and a pinch of red pepper flakes. Sauté until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute, or until fragrant.
  3. Next, add the white rice to the skillet, stirring to coat the rice in the flavorful oil and onion mixture. Then, add the finely chopped broccoli, stirring until well combined.
  4. Pour in the chicken stock, bringing the mixture to a gentle boil. Reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  5. Once the rice is tender, return the sautéed chicken to the skillet. Stir in the sour cream and shredded cheese, mixing until everything is well combined and the cheese is melted and gooey. Adjust seasoning if needed.
