Ingredients
  

  • 4 cups small cauliflower florets
  • 1 ½ tsp baking powder OR 2 ½ tbsp flaxmeal (for a vegan option)
  • cup flour (spelt, white, oat, gluten-free all-purpose, and sorghum work well. Readers have also recommended almond flour)
  • 1 tsp dried oregano (optional for extra flavor)
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ½ to ⅔ cup breadcrumbs OR almond flour (for coating)

Method
 

  1. Step 1: Prep the Cauliflower - Start by preheating your oven to 400°F (200°C). While the oven is heating, steam or microwave the cauliflower florets until they are tender, about 5-7 minutes. Once cooked, drain any excess water and let them cool slightly.
  2. Step 2: Process the Cauliflower - Transfer the cooled cauliflower into a food processor. Pulse until finely chopped but not pureed. You want a rice-like consistency.
  3. Step 3: Mix the Ingredients - In a large mixing bowl, combine the processed cauliflower, baking powder (or flaxmeal), flour, oregano (if using), garlic powder, and salt. Stir until everything is well combined.
  4. Step 4: Shape the Tater Tots - Using a cookie scoop or a spoon, portion out the mixture and shape it into small, oval tots. Place them on a parchment-lined baking sheet.
  5. Step 5: Coat the Tater Tots - If you’re using breadcrumbs, pour them into a shallow bowl. Roll each shaped tot in the breadcrumbs to coat them evenly.
  6. Step 6: Bake to Perfection - Bake the tater tots in the preheated oven for 25-30 minutes, flipping them halfway through.
  7. Step 7: Serve and Enjoy! - Remove the tater tots from the oven and let them cool for a few minutes. Serve them with your favorite dipping sauce.
