Cauliflower Cheese Sauce for Pasta

Ingredients
  

  • 1 pound short cut pasta
  • 1 small head cauliflower
  • 1 cup chicken stock or vegetable broth
  • 2 cups grated sharp cheddar cheese
  • 1/2 cup grated parmesan cheese
  • Salt & pepper to taste

  • Colander

Method
 

  1. Begin by bringing a large pot of salted water to a boil. Add the short cut pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta in a colander and set aside.
  2. While the pasta cooks, chop the cauliflower into florets. Place the florets in a steaming basket over a pot of simmering water or in a microwave-safe dish with a splash of water. Steam the cauliflower until tender, about 10 minutes.
  3. Transfer the steamed cauliflower to a blender or food processor. Add the chicken stock (or vegetable broth) and blend until smooth. If the mixture is too thick, add a little more broth to reach your desired consistency.
  4. With the blender still running, add the grated sharp cheddar and parmesan cheese. Blend until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
  5. In a large skillet over medium heat, combine the cooked pasta and the cauliflower cheese sauce. Stir until the pasta is evenly coated with the sauce. Heat through for about 2-3 minutes.
  6. Serve your Cauliflower Cheese Sauce for Pasta immediately. You can garnish with extra cheese, herbs, or a sprinkle of pepper for a touch of elegance.

Notes

  • This sauce can be made ahead of time and stored in the fridge for up to 3 days.
  • Substitute with frozen cauliflower if you prefer; just steam it according to package instructions.
  • Add a pinch of red pepper flakes for a spicy kick!
