  1. Step 1: Prepare the Steaks - Take the strip steaks out of the refrigerator and let them come to room temperature for about 30 minutes.
  2. Step 2: Season Generously - Pat the steaks dry with paper towels and season both sides generously with kosher salt and black pepper.
  3. Step 3: Preheat Your Skillet - Place your cast iron skillet over high heat and preheat for about 5 minutes.
  4. Step 4: Sear the Steaks - Add the seasoned strip steaks to the hot skillet and sear each side for about 4-5 minutes for medium-rare.
  5. Step 5: Check Doneness - Use an instant-read meat thermometer to check for doneness (130°F for medium-rare).
  6. Step 6: Rest the Steaks - Remove the steaks from the skillet and let them rest for at least 5-10 minutes on a cutting board.
  7. Step 7: Slice and Serve - Slice the steak against the grain and serve immediately with your favorite sides.
