Ingredients
  

For the Cake:
  • 3 cups carrots peeled and grated
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 4 eggs
  • 1 cup honey
  • 0.5 cup canola oil or extra light olive oil
  • 2 tsp vanilla extract
  • 1 cup applesauce
  • 1 cup crushed walnuts toasted on a skillet (optional)
For the Cream Cheese Frosting:
  • 2 cups powdered sugar
  • 16 oz cream cheese
  • 2 sticks unsalted butter
  • 1 tbsp pure vanilla extract
  • 0.5 cup walnuts coarsely chopped and toasted on a skillet
  • 0.25 cup honey to drizzle over the top

Method
 

Instructions
  1. Step 1: Preheat the oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Grease baking pans with oil or butter and dust with flour to prevent sticking.
  3. Step 3: In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Step 4: In another bowl, beat eggs, then add honey, canola oil, vanilla extract, and applesauce. Whisk until combined.
  5. Step 5: Gradually add wet mixture to dry ingredients, stirring gently until just combined.
  6. Step 6: Fold in grated carrots and toasted walnuts into the batter.
  7. Step 7: Pour batter into prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Step 8: Cool cakes in pans for 10 minutes, then transfer to a cooling rack.
  9. Step 9: For the frosting, beat cream cheese and butter until creamy, then add powdered sugar and vanilla extract.
