  • 1/2 tsp cinnamon for warm, comforting spice
  • 1 tsp vanilla extract to bring flavors together
  • 1 dash sea salt to enhance overall taste

Instructions
  1. Start by gathering all your ingredients. Make sure your dates are pitted and your carrots are washed and chopped into manageable chunks.
  2. In your food processor, add the raw almonds and pecans. Pulse them a few times until they are finely chopped but not turned into flour.
  3. Next, add the chopped carrots and pitted medjool dates to the food processor. Pulse until everything is well combined and the mixture starts to clump together.
  4. Add the shredded coconut, cinnamon, vanilla extract, and a dash of sea salt. Pulse a few more times until everything is fully mixed.
  5. Using your hands, take small amounts of the mixture and roll them into bite-sized balls about one inch in diameter.
  6. Place the rolled bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to help them firm up.

Notes

  • For a more decadent flavor, try adding a tablespoon of maple syrup or agave nectar.
  • These bites are perfect for meal prep! Make a double batch and store some in the freezer for later.
  • Don’t skip the chilling step; it helps the bites hold their shape better.
