- Start by gathering all your ingredients. Make sure your dates are pitted and your carrots are washed and chopped into manageable chunks.
- In your food processor, add the raw almonds and pecans. Pulse them a few times until they are finely chopped but not turned into flour.
- Next, add the chopped carrots and pitted medjool dates to the food processor. Pulse until everything is well combined and the mixture starts to clump together.
- Add the shredded coconut, cinnamon, vanilla extract, and a dash of sea salt. Pulse a few more times until everything is fully mixed.
- Using your hands, take small amounts of the mixture and roll them into bite-sized balls about one inch in diameter.
- Place the rolled bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to help them firm up.
