- Step 1: Prepare the Popcorn - Pop your popcorn according to the package instructions. Spread it out on a large baking sheet and remove un-popped kernels.
- Step 2: Combine the Dry Ingredients - In a large mixing bowl, combine the popped popcorn, rice cereal, pretzel twists, and pecan halves. Toss together until mixed.
- Step 3: Make the Caramel - In a medium saucepan, combine brown sugar, butter, and light corn syrup. Cook over medium heat, stirring until boiling. Boil for about 4-5 minutes until deep golden.
- Step 4: Add Flavor - Remove from heat, stir in vanilla extract and baking soda. Pour caramel over popcorn mix.
- Step 5: Mix Thoroughly - Fold caramel into popcorn mix until evenly coated.
- Step 6: Bake the Snack Mix - Preheat oven to 250°F (120°C). Spread mix on a lined baking sheet and bake for 45 minutes, stirring every 15 minutes.
- Step 7: Cool and Enjoy - Let cool completely on baking sheet. Break apart and store in an airtight container.
