  • 4 cups rice square cereal Crispix or Chex Mix
  • 2 cups mini pretzel twists
  • 1 cup pecan halves or substitute with honey roasted peanuts, almonds, or walnuts
  • 1 cup brown sugar for caramel flavor
  • 1/2 cup butter 1 stick
  • 1/2 cup light corn syrup for smooth caramel consistency
  • 1 teaspoon vanilla extract for aromatic sweetness
  • 1/2 teaspoon baking soda for light texture

Method
 

Instructions:
  1. Step 1: Prepare the Popcorn - Pop your popcorn according to the package instructions. Spread it out on a large baking sheet and remove un-popped kernels.
  2. Step 2: Combine the Dry Ingredients - In a large mixing bowl, combine the popped popcorn, rice cereal, pretzel twists, and pecan halves. Toss together until mixed.
  3. Step 3: Make the Caramel - In a medium saucepan, combine brown sugar, butter, and light corn syrup. Cook over medium heat, stirring until boiling. Boil for about 4-5 minutes until deep golden.
  4. Step 4: Add Flavor - Remove from heat, stir in vanilla extract and baking soda. Pour caramel over popcorn mix.
  5. Step 5: Mix Thoroughly - Fold caramel into popcorn mix until evenly coated.
  6. Step 6: Bake the Snack Mix - Preheat oven to 250°F (120°C). Spread mix on a lined baking sheet and bake for 45 minutes, stirring every 15 minutes.
