Ingredients
  

For the Quesadillas:
  • 4 pieces flour tortilla wraps Soft and pliable
  • 1 cup grated cheese Monterey Jack and cheddar blend
  • 1 cup cooked chicken shredded or diced
  • 1 teaspoon Cajun seasoning for flavor
  • 1 pieces tomato diced
  • 1 pieces small red onion finely chopped
  • 1 pieces chili red or green, chopped
  • 1 cup fresh spinach small handful
  • 1 pieces lime to serve

Method:
  1. In a mixing bowl, combine your cooked chicken with the Cajun seasoning. Make sure the chicken is well-coated to maximize flavor.
  2. Dice the tomato, finely chop the red onion, and if you’re using a chili, remove the seeds and chop it as well. Add the fresh spinach to the mix for that burst of color and nutrition.
  3. On a clean surface, lay out one tortilla. Sprinkle a generous amount of grated cheese over half of the tortilla, followed by a portion of the seasoned chicken mixture, some chopped veggies, and another sprinkle of cheese on top. Fold the tortilla over to create a half-moon shape.
  4. Heat your skillet over medium heat. Once hot, place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy, then carefully flip and cook for another 3-4 minutes on the other side.
  5. Repeat the assembly and cooking process with the remaining tortillas and filling until you have a delicious stack of Cajun Chicken Quesadillas.
  6. Once cooked, remove the quesadillas from the skillet and let them rest for a minute. Slice them into wedges and serve with lime wedges on the side for squeezing. Enjoy the burst of flavors!

Notes

  • Feel free to use leftover rotisserie chicken to save time!
  • For a vegetarian option, swap the chicken for black beans or mushrooms.
  • Adjust the amount of Cajun seasoning to suit your spice tolerance.
