Ingredients
  

For the Biscuits:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons cold butter cut into small pieces
  • 4 tablespoons good quality goat cheese cut into small pieces
  • 1 cup buttermilk
  • 2 tablespoons butter divided (for greasing and topping)
  • ½ cup freshly grated Parmesan cheese

Method
 

Instructions:
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
  3. Add the cold butter into the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
  4. Gently fold in the goat cheese, ensuring it’s evenly distributed throughout the mixture.
  5. Pour in the buttermilk, stirring gently until just combined.
  6. Using 1 tablespoon of the divided butter, grease your baking sheet.
  7. Scoop out a generous tablespoon of the dough and drop it onto the prepared baking sheet.
  8. Sprinkle the Parmesan cheese over the tops of the biscuits. Bake for 12-15 minutes or until they are golden brown.
  9. Once baked, brush the tops with the remaining tablespoon of melted butter.
  10. Let the biscuits cool slightly before serving.

Notes

  • For a heartier biscuit, try using whole wheat flour.
  • Coconut oil or ghee can be great alternatives for butter.
  • Store in an airtight container at room temperature for up to 2 days.
