Instructions:
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
- Add the cold butter into the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
- Gently fold in the goat cheese, ensuring it’s evenly distributed throughout the mixture.
- Pour in the buttermilk, stirring gently until just combined.
- Using 1 tablespoon of the divided butter, grease your baking sheet.
- Scoop out a generous tablespoon of the dough and drop it onto the prepared baking sheet.
- Sprinkle the Parmesan cheese over the tops of the biscuits. Bake for 12-15 minutes or until they are golden brown.
- Once baked, brush the tops with the remaining tablespoon of melted butter.
- Let the biscuits cool slightly before serving.
Notes
- For a heartier biscuit, try using whole wheat flour.
- Coconut oil or ghee can be great alternatives for butter.
- Store in an airtight container at room temperature for up to 2 days.
