  • 1 slice Swiss cheese WW reduced fat

Instructions
  1. Start by gathering all your ingredients. Make sure your broccoli is cooked and ready to go. You can steam it or microwave it for a few minutes until tender.
  2. In a mixing bowl, crack one whole egg and add the two egg whites. Pour in the skim milk, and season with salt and fresh pepper. Use a whisk or fork to beat the mixture until it’s well combined and slightly frothy.
  3. Spray your non-stick skillet with oil spray and place it over medium heat. Allow it to warm up for a minute.
  4. Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly. Let it cook undisturbed for about 2-3 minutes, or until the edges start to set.
  5. Once the eggs are beginning to set, sprinkle the cooked broccoli evenly over half of the omelet. Place the slice of Swiss cheese on top of the broccoli.
  6. Using your spatula, carefully fold the omelet in half, covering the broccoli and cheese. Cook for an additional 1-2 minutes, allowing the cheese to melt and the omelet to finish cooking through.
