- Start by gathering all your ingredients. Make sure your broccoli is cooked and ready to go. You can steam it or microwave it for a few minutes until tender.
- In a mixing bowl, crack one whole egg and add the two egg whites. Pour in the skim milk, and season with salt and fresh pepper. Use a whisk or fork to beat the mixture until it’s well combined and slightly frothy.
- Spray your non-stick skillet with oil spray and place it over medium heat. Allow it to warm up for a minute.
- Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly. Let it cook undisturbed for about 2-3 minutes, or until the edges start to set.
- Once the eggs are beginning to set, sprinkle the cooked broccoli evenly over half of the omelet. Place the slice of Swiss cheese on top of the broccoli.
- Using your spatula, carefully fold the omelet in half, covering the broccoli and cheese. Cook for an additional 1-2 minutes, allowing the cheese to melt and the omelet to finish cooking through.
