Method
 

Baking Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). This ensures that your muffins bake evenly.
  2. Step 2: In your high-speed blender, combine the cottage cheese, mashed bananas, peanut butter, melted coconut oil, maple syrup, eggs, and vanilla extract. Blend until smooth and creamy.
  3. Step 3: In a mixing bowl, whisk together the whole wheat pastry flour, baking soda, and kosher salt. This ensures that the baking soda is evenly distributed throughout the flour.
  4. Step 4: Pour the blended wet mixture into the bowl with the dry ingredients. Gently fold the two mixtures together with a silicone spatula until just combined. Be careful not to overmix!
  5. Step 5: Gently fold in the chocolate chips until evenly distributed throughout the batter.
  6. Step 6: Scoop the batter into your prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
