Baking Instructions:
- Step 1: Preheat your oven to 350°F (175°C). This ensures that your muffins bake evenly.
- Step 2: In your high-speed blender, combine the cottage cheese, mashed bananas, peanut butter, melted coconut oil, maple syrup, eggs, and vanilla extract. Blend until smooth and creamy.
- Step 3: In a mixing bowl, whisk together the whole wheat pastry flour, baking soda, and kosher salt. This ensures that the baking soda is evenly distributed throughout the flour.
