  • 15 ounces black beans canned, rinsed
  • 2 pieces avocados chopped
  • 1/8 cup Mexican cheese

  • 2 pieces tomatoes chopped
  • 1/2 cup yellow onion chopped
  • 1 clove garlic chopped
  • 1 piece lime fresh, juiced
  • 3 tablespoons olive oil
  • to taste salt

Method
 

Preparation Steps:
  1. Begin by cooking your brown rice according to the package instructions.
  2. In a large mixing bowl, combine the chopped tomatoes, yellow onion, and garlic. Drizzle with olive oil and lime juice. Season with salt and toss everything together.
  3. Take a whole-wheat tortilla and layer it with a scoop of cooked brown rice, rinsed black beans, chopped avocados, Mexican cheese, and fresh cilantro. Fold the sides over the filling and roll tightly.
  4. In a skillet over medium heat, toast the assembled burritos for about 2-3 minutes on each side until golden and crispy.
  5. Prepare your berry salad in another mixing bowl by combining fresh berries and herbs.
  6. Serve the warm burritos with the berry salad on the side, drizzled with extra lime juice if desired.
