Ingredients
  

  • 1 tablespoon brown rice syrup helps caramelize the spices
  • 1 tablespoon pistachio or neutral oil light oil recommended
  • 1 tablespoon lemon juice adds acidity
  • 1 tablespoon Berbere seasoning blend key for flavor
  • 1/2 teaspoon sea salt enhances flavors
  • Zest from 1 lemon adds citrus aroma
  • 2 cups raw pistachios in the shell high-quality recommended

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, combine the brown rice syrup, pistachio oil, lemon juice, Berbere seasoning, sea salt, and lemon zest. Stir until well combined.
  3. Step 3: Add the raw pistachios to the bowl and toss them until evenly coated.
  4. Step 4: Line a baking sheet with parchment paper and spread the coated pistachios in a single layer.
  5. Step 5: Roast in the preheated oven for about 15-20 minutes, stirring halfway through.
  6. Step 6: Once golden and fragrant, remove from the oven and let cool before serving.

Notes

  • Store in an airtight container at room temperature for up to two weeks.
  • For a sweeter version, substitute brown rice syrup with maple syrup or honey.
  • Use raw pistachios in the shell for best results.
