Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 4 teaspoons baking powder (aluminium-free)
  • 1/3 cup white granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, separated
  • 1/2 cup vegetable oil
  • 2 cups milk
  • 2 teaspoons pure vanilla extract

Method
 

  1. Preheat your waffle iron according to the manufacturer’s instructions. Make sure it’s nice and hot before you pour in the batter for that crispy finish.
  2. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, sugar, salt, cinnamon, and nutmeg until well combined.
  3. Separate the egg yolks from the whites. Place the yolks in a medium bowl and the whites in another large bowl.
  4. To the bowl with the egg yolks, add the vegetable oil, milk, and vanilla extract. Whisk until the mixture is smooth and creamy.
  5. Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly okay!
  6. Using an electric mixer, beat the egg whites until stiff peaks form.
  7. Gently fold the whipped egg whites into the waffle batter using a spatula.
  8. Spray the preheated waffle iron with a bit of non-stick spray if needed. Pour an appropriate amount of batter onto the hot iron, closing the lid and cooking until golden brown, typically around 4-5 minutes.
  9. Carefully remove the waffles from the iron and serve them immediately with your favorite toppings.

Notes

  • Store leftover waffles in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze waffles in a single layer and transfer to a freezer-safe bag once frozen.
  • Reheat waffles in the toaster or oven until warm and crispy again.
