Ingredients
  

  • 1 small golden beet scrubbed and chopped
  • 1 ripe banana peeled and frozen
  • 1 ripe mango peeled and chopped
  • 2 teaspoons fresh turmeric peeled and grated
  • 2 teaspoons ginger peeled and grated
  • 1 zest orange
  • 1.5 cups unsweetened almond milk
  • chopped walnuts

  • full-fat coconut milk

Method
 

  1. Begin by scrubbing and chopping the golden beet into small pieces. This will help it blend more easily. Peel and chop your ripe mango and banana, and set them aside.
  2. Using a microplane or a fine grater, grate the fresh turmeric and ginger. Zest the orange with a zester or a fine grater, making sure to avoid the bitter white pith.
  3. In a high-powered blender, combine the chopped golden beet, frozen banana, chopped mango, grated turmeric, grated ginger, and orange zest.
  4. Add the unsweetened almond milk and a splash of full-fat coconut milk for creaminess. The almond milk will help the smoothie blend smoothly, while the coconut milk adds richness.
  5. Blend on high until smooth and creamy, stopping to scrape down the sides of the blender if needed. If the smoothie is too thick, add a bit more almond milk until you reach your desired consistency.
  6. Once blended, pour the smoothie into a glass and top with chopped walnuts and chia seeds for added texture and nutrition.

Notes

  • For a sweeter smoothie, consider adding a touch of honey or maple syrup if desired.
