- Gather all your ingredients. Chop the onion finely and set aside. If you're using black beans, rinse and drain them.
- In a large skillet, heat the olive oil over medium heat. Add the diced yellow onion and sauté for about 3-5 minutes, or until the onions are translucent and fragrant.
- Add the lean ground beef to the skillet with the onions. Cook until the beef is browned, breaking it up with a spatula as it cooks. This should take about 5-7 minutes.
- Once the beef is cooked, sprinkle in the taco seasoning and pour in the enchilada sauce. Stir well to combine, and let the mixture simmer for about 2-3 minutes until heated through.
- If you're using black beans, now is the time to add them to the skillet. Stir to incorporate everything evenly, allowing the flavors to meld together.
- While the filling is simmering, preheat your oven to 350°F (175°C). Spray a baking dish with cooking spray. Warm your flour tortillas in the microwave for about 30 seconds to make them pliable.
- Spread a layer of refried beans on each tortilla, followed by a generous scoop of the beef mixture. Top with a handful of shredded cheddar cheese.
- Carefully roll each tortilla tightly, folding in the sides as you go to secure the filling. Place the rolled burritos seam-side down in the prepared baking dish.
- Once all the burritos are assembled in the baking dish, sprinkle any remaining cheese on top. Cover with foil and bake for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Take the burritos out of the oven, and let them cool for a few minutes. Serve with your choice of toppings like sour cream, avocado, guacamole, pico de gallo, and salsa. Enjoy your delicious homemade beef burritos!
