In a skillet over medium heat, add the lean ground beef. Break it apart with your mixing spoon and cook until browned, about 5-7 minutes. Drain any excess fat.
Sprinkle the taco seasoning over the browned beef. Stir to combine, then add the salsa. Allow the mixture to simmer for about 2-3 minutes until heated through.
Preheat your oven to 350°F (175°C). On a baking sheet, arrange the tortilla chips in a single layer. Make sure there’s enough space for the toppings!
Spread a spoonful of refried beans onto each tortilla chip. Next, add a generous portion of the seasoned beef mixture on top of the beans.
Sprinkle a layer of shredded cheddar cheese over the beef on each chip. Feel free to use a mix of cheeses if you prefer a more complex flavor!
Place the baking sheet in the preheated oven. Bake for about 10-12 minutes, or until the cheese is melted and bubbly.
Carefully remove the baking sheet from the oven. Let the taco bites cool for a minute, then transfer them to a serving platter. Serve with extra salsa, guacamole, or sour cream on the side for dipping. Enjoy!
