Beef & Bean Taco Bites

These Beef & Bean Taco Bites are a fun and flavorful appetizer that will impress your guests!

Ingredients
  

  • 40 pieces round tortilla chips
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 1 can (15-oz) refried beans
  • 1 cup shredded cheddar cheese divided

Method
 

  1. In a skillet over medium heat, add the lean ground beef. Break it apart with your mixing spoon and cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Sprinkle the taco seasoning over the browned beef. Stir to combine, then add the salsa. Allow the mixture to simmer for about 2-3 minutes until heated through.
  3. Preheat your oven to 350°F (175°C). On a baking sheet, arrange the tortilla chips in a single layer. Make sure there’s enough space for the toppings!
  4. Spread a spoonful of refried beans onto each tortilla chip. Next, add a generous portion of the seasoned beef mixture on top of the beans.
  5. Sprinkle a layer of shredded cheddar cheese over the beef on each chip. Feel free to use a mix of cheeses if you prefer a more complex flavor!
  6. Place the baking sheet in the preheated oven. Bake for about 10-12 minutes, or until the cheese is melted and bubbly.
  7. Carefully remove the baking sheet from the oven. Let the taco bites cool for a minute, then transfer them to a serving platter. Serve with extra salsa, guacamole, or sour cream on the side for dipping. Enjoy!

Notes

  • For a crunchier bite, you can toast the tortilla chips in the oven for a few minutes before assembling the taco bites.
  • Using low-fat cheese can cut down on calories without sacrificing flavor.
  • These taco bites can be made ahead of time and stored in the fridge before baking. Just add a few minutes to the baking time if they are cold.
