Cooking Instructions:
- In a large skillet over medium heat, add the lean ground beef. Break it apart with a spatula, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Add the chopped onion and minced garlic to the skillet with the beef. Sauté for about 2-3 minutes until the onion is translucent and fragrant.
- Sprinkle in the chili powder, ground cumin, smoked paprika, salt, pepper, and dried oregano. Stir well to combine, allowing the flavors to meld for an additional 2-3 minutes.
- Stir in the can of refried beans, mixing thoroughly until heated through. Remove from heat and set aside.
- If you are using raw tortillas, cook them on a skillet for about 30 seconds on each side until they are warm and pliable. If using store-bought, you can warm them directly in the microwave for about 15-20 seconds.
- Lay a tortilla flat on a clean surface. Spoon a generous amount of the beef and bean mixture down the center of the tortilla. Top with shredded sharp cheddar cheese, sour cream, salsa, hot sauce, and your choice of fresh toppings such as lettuce, tomatoes, and guacamole.
- To roll, fold in the sides of the tortilla and then roll from the bottom to the top, securing the filling inside. Repeat with the remaining tortillas and filling.
- For a crispy finish, preheat your oven to 350°F (175°C). Place the rolled burritos seam-side down in a baking dish. Top with additional salsa and cheese, then bake for 15-20 minutes until the cheese is bubbly and golden.
