Ingredients
  

For the Cake:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cups granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 4 ripe bananas mashed
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
For the Frosting:
  • 8 ounces cream cheese at room temperature
  • 0.5 cup unsalted butter at room temperature
  • 1 pinch salt
  • 4 cups powdered sugar
  • 1.5 teaspoons vanilla extract

Method:
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a separate bowl, mix the granulated sugar and vegetable oil. Add in the eggs, mashed bananas, vanilla extract, and buttermilk. Whisk until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into your prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Allow the cake to cool completely in the pan.
  7. In a mixing bowl, beat the cream cheese and unsalted butter together until creamy. Gradually add the powdered sugar and salt, mixing until smooth.
  8. Once cooled, spread the cream cheese frosting evenly across the top of the cake.

Notes

  • Use very ripe bananas for maximum sweetness.
  • Be careful not to overmix the batter.
  • Allow the cake to cool completely before frosting.
