Instructions:
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease your muffin tin with avocado oil or line with muffin liners.
- Step 3: In a mixing bowl, whisk together quick oats, ground cinnamon, baking powder, and sea salt.
- Step 4: Mash the ripe bananas until smooth, leaving some lumps if desired.
- Step 5: Add eggs, avocado oil, and vanilla extract to the bananas and whisk until combined.
- Step 6: Pour the wet mixture into the dry ingredients and fold gently until just combined.
- Step 7: If desired, fold in chocolate chips.
- Step 8: Fill muffin cups about ¾ full with batter.
- Step 9: Bake for 18-20 minutes or until a toothpick comes out clean.
- Step 10: Cool in the tin for 5 minutes, then transfer to a cooling rack.
