Ingredients
  

For the Donuts:
  • 1 cup all-purpose baking flour
  • 2 tablespoons all-purpose baking flour
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 cup very ripe bananas mashed
  • 2 1/2 tablespoons unsalted butter melted
  • 1 large egg at room temperature
For the Cream Cheese Frosting:
  • 3 ounces cream cheese VERY soft
  • 3 tablespoons unsalted butter VERY soft
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups confectioners' sugar sifted
  • 1-2 tablespoons milk to adjust consistency
  • 1/2 cup walnuts chopped, for decorating

Method
 

  1. Preheat your oven to 350°F (175°C). Grease your donut pan lightly with cooking spray or butter.
  2. In a large mixing bowl, whisk together the flour, brown sugar, salt, cinnamon, nutmeg, and baking powder.
  3. In a separate bowl, mash the ripe bananas until smooth. Add the melted butter, egg, and vanilla extract. Mix until smooth.
  4. Pour the banana mixture into the bowl of dry ingredients. Gently fold together with a spatula until just combined.
  5. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  6. Bake for 10-12 minutes, or until a toothpick comes out clean.
  7. Let the donuts cool in the pan for 5 minutes, then transfer to a cooling rack.
  8. Beat the cream cheese and butter together until smooth. Gradually add the confectioners' sugar and milk to reach desired consistency.
  9. Frost the cooled donuts with the cream cheese frosting.
  10. Sprinkle chopped walnuts on top of the frosted donuts.

Notes

  • Use very ripe bananas for best flavor and moisture.
  • Do not overmix the batter to keep donuts fluffy.
  • Allow donuts to cool completely before frosting.
