Ingredients
  

For the Chocolate Chia Pudding:
  • 2 cups almond or coconut milk (or your favorite milk)
  • 1/3 cup chia seeds
  • 1/4 cup cacao or cocoa powder
  • 2 tablespoons honey or maple syrup (or 4 pitted and chopped Medjool dates)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
For the Coconut Chia Layer:
  • 1 can full-fat canned coconut milk
  • 1/3 cup chia seeds
  • 2 tablespoons honey or maple syrup
  • 1/2 vanilla bean seeds removed
  • 1 ripe banana mashed
For the Buckwheat and Oat Layer:
  • 2 ripe bananas sliced
  • 1/2 cup raw buckwheat groats
  • 1/2 cup raw oatmeal
  • 1 tablespoon maple syrup
  • 1 teaspoon coconut oil (melted)
  • Chopped chocolate and dried roses for topping

Method
 

How to Prepare Banana and Chocolate Chia Cream Pie Parfaits:
  1. In a medium bowl, whisk together 2 cups of almond or coconut milk, 1/3 cup chia seeds, 1/4 cup cacao or cocoa powder, 2 tablespoons of honey or maple syrup (or 4 chopped Medjool dates), 2 teaspoons of vanilla extract, and 1/2 teaspoon salt. Stir well until all the ingredients are combined. Allow the mixture to sit for about 10 minutes, then stir again to prevent clumping.
  2. In another bowl, combine the can of full-fat coconut milk, 1/3 cup chia seeds, 2 tablespoons of honey or maple syrup, and the seeds from 1/2 a vanilla bean. Mix until smooth. Add the mashed ripe banana and mix until fully incorporated. Set aside.
  3. In a small bowl, mix together 1/2 cup raw buckwheat groats, 1/2 cup raw oatmeal, 1 tablespoon of maple syrup, 1 teaspoon of melted coconut oil, and a pinch of salt. Stir well to combine, ensuring all dry ingredients are coated with the syrup and oil.
  4. In your parfait glasses or jars, start by adding a layer of the chocolate chia pudding. Next, add a layer of the coconut chia mixture. Follow this with a layer of the buckwheat and oatmeal mixture. Repeat the layers until the glasses are filled, finishing with the coconut chia layer on top.
  5. Top your parfaits with sliced bananas, chopped chocolate, and dried roses for a beautiful presentation. Serve immediately or refrigerate for a refreshing treat later on.
