How to Prepare Banana and Chocolate Chia Cream Pie Parfaits:
- In a medium bowl, whisk together 2 cups of almond or coconut milk, 1/3 cup chia seeds, 1/4 cup cacao or cocoa powder, 2 tablespoons of honey or maple syrup (or 4 chopped Medjool dates), 2 teaspoons of vanilla extract, and 1/2 teaspoon salt. Stir well until all the ingredients are combined. Allow the mixture to sit for about 10 minutes, then stir again to prevent clumping.
- In another bowl, combine the can of full-fat coconut milk, 1/3 cup chia seeds, 2 tablespoons of honey or maple syrup, and the seeds from 1/2 a vanilla bean. Mix until smooth. Add the mashed ripe banana and mix until fully incorporated. Set aside.
- In a small bowl, mix together 1/2 cup raw buckwheat groats, 1/2 cup raw oatmeal, 1 tablespoon of maple syrup, 1 teaspoon of melted coconut oil, and a pinch of salt. Stir well to combine, ensuring all dry ingredients are coated with the syrup and oil.
- In your parfait glasses or jars, start by adding a layer of the chocolate chia pudding. Next, add a layer of the coconut chia mixture. Follow this with a layer of the buckwheat and oatmeal mixture. Repeat the layers until the glasses are filled, finishing with the coconut chia layer on top.
- Top your parfaits with sliced bananas, chopped chocolate, and dried roses for a beautiful presentation. Serve immediately or refrigerate for a refreshing treat later on.
