Ingredients
  

Filling
  • 3 cups pre-cooked rotisserie chicken shredded
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon pepper
  • 1/2 cup Mexican-style cheese blend
Wrap
  • 12 pieces corn tortillas
  • 1 tablespoon oil for coating tortillas, avocado oil recommended

Method
 

  1. Step 1: Preheat Your Oven - Start by preheating your oven to 425°F (220°C). This will ensure that your taquitos are perfectly crispy once baked.
  2. Step 2: Prepare the Filling - In a mixing bowl, combine the shredded rotisserie chicken, cumin, garlic powder, chili powder, pepper, and 1/2 cup of Mexican-style cheese. Mix everything until the chicken is well coated with the spices and cheese.
  3. Step 3: Warm the Tortillas - To make rolling the tortillas easier, warm them slightly. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in a damp paper towel and microwave for 20 seconds.
  4. Step 4: Assemble the Taquitos - Take a tortilla and place about 2 tablespoons of the chicken mixture near one end. Roll it up tightly and place it seam-side down on a baking sheet. Repeat this process with the remaining tortillas and filling.
  5. Step 5: Coat with Oil - Using a pastry brush, lightly coat the tops of the taquitos with avocado oil. This will help them become golden and crispy in the oven.
  6. Step 6: Bake the Taquitos - Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the taquitos are golden brown and crispy. Be sure to flip them halfway through for even crispiness.
  7. Step 7: Serve with Toppings - Once baked, remove the taquitos from the oven and let them cool slightly. Serve with shredded lettuce, diced tomatoes, salsa, guacamole, and crema for dipping. Enjoy your delicious creation!
