Ingredients
  

  • 2 pieces Chicken Breasts Cooked and shredded
  • 1/2 cup Cheddar Cheese Shredded
  • 1/4 cup Salsa Your favorite kind
  • 1/2 tsp Oregano
  • 1/2 tsp Cumin
  • 1/2 tsp Garlic Salt With parsley flakes
  • 1/2 tsp Garlic Pepper
  • 1 can Green Chilis Optional for extra flavor
  • 12 pieces Corn Tortillas
  • Olive Oil Spray For a crispy finish

Method
 

  1. Start by preheating your oven to 425°F (220°C). This ensures that your taquitos get the perfect crispy exterior.
  2. In a mixing bowl, combine the shredded chicken, cheddar cheese, salsa, oregano, cumin, garlic salt, garlic pepper, and green chilis (if using). Mix well until all the ingredients are thoroughly combined.
  3. To make rolling easier, warm the corn tortillas. You can do this by placing them in a damp paper towel and microwaving for about 30 seconds. This will make them pliable and less likely to crack.
  4. Place about 2 tablespoons of the chicken mixture in the center of each tortilla. Roll them tightly, starting from one end. Secure them with a toothpick if needed.
  5. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Be sure to leave some space between each taquito for even cooking.
  6. Lightly spray the tops of the taquitos with olive oil spray. This will help them achieve that golden-brown color. Bake in the preheated oven for about 15-20 minutes or until they are crispy and golden.
  7. Once baked, remove the taquitos from the oven and let them cool for a minute. Serve them warm with your favorite dipping sauces like guacamole, sour cream, or additional salsa.

Notes

  • Warming the tortillas is essential to prevent cracking.
  • Ensure the filling is not too wet to avoid soggy tortillas.
  • Do not overcrowd the baking sheet for even cooking.
  • Let the taquitos cool slightly after baking to avoid burning your mouth!
