Ingredients
  

  • 2 ripe bananas peeled
  • 2 cups old fashioned oats
  • 1-1/3 cups almond milk
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 cups fresh raspberries

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add in the almond milk, maple syrup, almond butter, and vanilla extract. Mix until well combined.
  3. Step 3: Sprinkle in the oats, baking powder, and cinnamon. Stir until everything is well incorporated.
  4. Step 4: Gently fold in the raspberries, being careful not to crush them too much.
  5. Step 5: Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.
  6. Step 6: Bake for 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Step 7: Allow to cool for about 10 minutes, cut into squares, and serve warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • For longer storage, freeze individual squares wrapped tightly for up to 3 months.
  • Reheat in the microwave or oven until warmed through.
