Ingredients
  

For the Salmon:
  • 4 fillets salmon (about 5-6 oz. each, skin on or off)
  • 4 tbsp. mayonnaise
  • ½ tsp. sea salt (or to taste)
  • ½ tsp. pepper (or to taste)
  • 1 cup panko breadcrumbs
  • ½ cup Parmesan cheese (grated)
  • 1 tbsp. parsley (finely chopped)
  • ½ tsp. paprika
  • 1 small clove garlic (minced)
  • 1 tbsp. olive oil

Method
 

Instructions:
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease an oven-safe baking dish or sheet with olive oil.
  3. In a mixing bowl, combine the mayonnaise, sea salt, pepper, panko breadcrumbs, grated Parmesan, chopped parsley, paprika, and minced garlic. Mix until well incorporated.
  4. Place the salmon fillets in the prepared baking dish and spread the panko mixture over each fillet.
  5. Transfer the dish to the oven and bake for 15-20 minutes until the topping is golden brown and the salmon is cooked through.
  6. Remove from the oven and let the salmon rest for a few minutes before serving.

Notes

  • For a dairy-free version, substitute mayonnaise with a dairy-free alternative and use nutritional yeast instead of Parmesan.
  • Ensure even cooking by using salmon fillets of similar size.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
