Begin by preheating your oven to 375°F (190°C) to ensure even cooking.
Pat the defrosted Mahi Mahi fillets dry with paper towels. Season both sides with sea salt, pepper, and a pinch of chili flakes.
In a small skillet, heat 1 tablespoon of oil over medium heat. Add the sliced garlic and sauté for about 1-2 minutes until fragrant and golden.
In a baking dish, place the seasoned Mahi Mahi fillets. Top each with sautéed garlic, a tablespoon of butter, a slice of lemon, and a sprig of fresh thyme and dill.
In a mixing bowl, combine the chopped cherries, capers, mixed herbs, lemon juice, honey, olive oil, and a pinch of salt and pepper. Toss gently.
Pour the cherry mixture over the Mahi Mahi fillets. Bake for about 20-25 minutes or until the fish is cooked through and flakes easily.
While the Mahi Mahi is baking, cook wild rice according to package instructions and steam the broccoli until vibrant green and tender.
Once done, remove the Mahi Mahi from the oven and serve hot with wild rice and steamed broccoli on the side.
