Baked Chicken Tacos Recipe

These Baked Chicken Tacos are a family favorite! Crispy shells filled with juicy chicken and cheese, perfect for a quick weeknight dinner.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound shredded cooked chicken (use rotisserie chicken)
  • 1 ounce taco seasoning
  • 1 cup diced onion
  • 14.5 ounces diced tomatoes (fully drained)
  • 4.5 ounces diced green chiles (fully drained)
  • 10 pieces hard taco shells (use Old El Paso Stand 'N Stuff)
  • 8 ounces refried beans (1 can)
  • 2 cups shredded Mexican blend cheese
  • to taste sliced jalapeños
  • to taste sour cream
  • to taste salsa
  • to taste shredded lettuce
  • to taste chopped fresh cilantro

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded cooked chicken, olive oil, taco seasoning, diced onion, drained diced tomatoes, and drained diced green chiles. Mix thoroughly.
  3. Place hard taco shells upright in a baking dish. Spoon a layer of refried beans, followed by the chicken mixture, and top with shredded cheese.
  4. Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly, and taco shells are crisp.
  5. Remove from the oven, let cool briefly, and top with jalapeños, sour cream, salsa, lettuce, and cilantro.

Notes

  • For a healthier option, use whole wheat or corn taco shells.
  • Store leftovers in an airtight container for up to 3 days.
  • Assemble tacos ahead of time and bake just before serving.
