Ingredients

For the Crust:
  • 25 cookies Oreo cookies
  • 5 tablespoons melted butter
For the Filling:
  • 2 (3.4-ounce) boxes instant chocolate pudding
  • 1 1/3 cups whole milk
  • 1/2 cup Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 8 ounces Cool Whip thawed
  • 8 cookies crushed Oreo cookies
  • 5 cookies Oreo cookies halved for garnish

Equipment

  • Mixing bowl
  • Whisk
  • 9-inch pie dish
  • Rubber spatula
  • Measuring cups and spoons
  • Food processor

Method

Stepwise Method:
  1. Step 1: Prepare the Oreo Crust - Preheat your oven to 350°F (175°C). In a food processor, crush the 25 Oreo cookies until they resemble fine crumbs. In a mixing bowl, combine the crushed cookies with the melted butter. Stir until the mixture is well combined and resembles wet sand. Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust. Bake for 8-10 minutes, then remove from the oven and allow to cool completely.
  2. Step 2: Make the Chocolate Pudding Filling - In a large mixing bowl, whisk together the two boxes of instant chocolate pudding with the whole milk. Whisk until the mixture thickens, about 2 minutes. Once thickened, add the Baileys Irish Cream and vanilla extract, stirring until well blended.
  3. Step 3: Incorporate the Cool Whip - Gently fold in the 8 ounces of thawed Cool Whip into the chocolate pudding mixture. Be careful not to overmix; you want to keep the filling light and airy. Once combined, fold in the 8 crushed Oreo cookies for an extra chocolatey crunch.
  4. Step 4: Assemble the Pie - Pour the chocolate filling into the cooled Oreo crust, spreading it evenly with a spatula. Smooth the top for an even finish.
  5. Step 5: Chill the Pie - Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. This allows the pie to set properly, enhancing the flavors.
  6. Step 6: Add the Topping - Once chilled and set, remove the pie from the refrigerator. Top with the remaining 8 ounces of Cool Whip, spreading it evenly across the surface. For a decorative touch, place the halved Oreos on top of the Cool Whip.
  7. Step 7: Serve and Enjoy - Slice the pie into wedges and serve chilled. Enjoy the delightful combination of rich chocolate, creamy filling, and the unique flavor of Baileys Irish Cream.

Notes

  • For a richer flavor, try adding chocolate shavings on top of the Cool Whip.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can prepare the crust and filling separately and assemble them just before serving for best results.
